Leftover fries are the saddest food in the fridge. They were crisp and golden yesterday; today, ninety seconds in the microwave turns them into warm, limp sticks. The same fate meets pizza, fried chicken, spring rolls, and anything else that once had a crust. Why the microwave ruins crispy food
Once you know the mechanism, everything else here follows from it.
A microwave works by exciting the water molecules in your food. That water heats up, turns to steam, and the steam has to go somewhere. It migrates outward and collects at the surface, right where the crust is. So the very process that warms your fries is also the process that soaks them. It is not a flaw in your technique or your microwave. It is what microwaves do.
An air fryer does the reverse. It blows hot, dry air across the surface fast enough to drive that moisture off, so breading, skin, and pastry dry back out and re-crisp while the inside warms through. That is the entire trick, and it is why the two appliances give such different results with the same leftover.
The cost is time. A microwave reheats in a minute or two; an air fryer takes several. Roughly three to five times as long, depending on the food. You are trading speed for texture, and for anything that started out crispy, the trade is usually worth it.
The food decides the temperature
This is the part that matters most, and it is why the converter asks what you are reheating before anything else. Reheating is not one setting. The temperature depends entirely on what is in the basket, and getting it wrong is how people end up with burnt edges and a cold middle.
Crispy things want it hot. Fries, fried chicken, pizza, spring rolls, and anything breaded need high heat to blast the surface moisture off before the inside overcooks. Reheating guides consistently put fries near the top of the range, because fries hold a lot of water and a lower temperature simply takes too long to drive it out, leaving you with a sad middle ground between limp and crisp. Delicate things want it gentler. Fish, pastry, and baked goods dry out fast and burn faster. The same air movement that rescues a chip will desiccate a croissant. Lower temperature, shorter time, and watch it.
Thick and frozen things want gentlest of all. A burrito, a stuffed item, a thick chicken breast: the enemy here is a scorched outside wrapped around a frozen core. Lower the heat and give it longer so the middle catches up.
General leftovers sit in the middle. Cooked meat, solid casseroles, and similar dishes are forgiving and land in the middle of the range.
Notice the through-line: the more delicate or dense the food, the lower and slower you go. The crispier the target, the hotter and faster. The tool encodes exactly this, which is why picking your food honestly matters more than the exact minute you type in.
The foods the tool will refuse to convert
Here is the thing I mentioned at the top, and it is my favourite feature of this tool.
If you tell the converter you are reheating soup, stew, a saucy dish, plain rice, or scrambled eggs, it will not give you a number. It will tell you to use a microwave or the stovetop instead.
That is deliberate. Liquids cannot go in an air fryer basket, and dry foods like rice just get drier. Reheating guides agree: cream-based sauces, soups, and very delicate items belong on the stovetop or in the microwave. I could have made the tool output a time for those anyway, and it would have looked more capable. It would also have led you to ruin your dinner. A tool that hands you a confident number for something that cannot work is not being helpful, it is being polite at your expense.
This is also the honest answer to a question people reasonably ask: is the air fryer just better than the microwave? No. It is better for anything that should be crisp, and worse or useless for anything wet. The microwave is not a bad appliance, it is a differently shaped one, and half of using either well is knowing which job belongs to which.
Getting it right in the basket
A few habits matter as much as the numbers.
Single layer, always. This one is non-negotiable. Pile food up and the pieces trap steam against each other, which recreates the exact sogginess you were trying to escape. Spread it out. Do two batches if you must.
Shake or flip halfway. Air moves in patterns, and turning the food evens out the result.
On preheating, the honest answer is that guides disagree. My tool page says you can skip it for reheating, on the reasoning that air fryers are small, the element sits close to the food, and they come up to heat in seconds. Some reheating guides recommend a short preheat anyway, particularly for maximum crisp on fried items. Both positions are defensible. My practical take: for most leftovers, skipping it is fine and saves you three minutes. If you are chasing the absolute best texture on fried chicken or fries, a brief preheat will not hurt.
Start low if you are unsure. It is easy to add another minute. It is impossible to un-burn a crust.
Going back the other way
The converter runs in reverse, from air fryer time to microwave time, for when speed beats texture and you are willing to accept a softer result.
One thing changes in that direction: your microwave’s wattage suddenly matters a great deal. A 700-watt model needs roughly 40% longer than a 1000-watt one for the same food, so the tool asks for your wattage when converting this way. It is printed on a label inside the door or on the back of the unit. Without that number, a microwave time is close to meaningless, because “two minutes” means two different things in two different machines.
The safety line I will not blur
Reheating has one hard rule, and texture has nothing to do with it. Leftovers need to reach 165°F (74°C) throughout, and this is a food-safety threshold, not a preference.
The air fryer makes this trickier than it looks, and in an interesting way. It heats the outside first, on purpose, which is exactly what you want for crispiness. But that means a beautifully crisp surface can sit on top of a centre that is still cool. A hot exterior and a bit of steam prove nothing about the middle. For anything with meat, check the thickest part with a thermometer before you eat it. The USDA guidance on safe temperatures is the reference I use across the site, and reheated leftovers are one of the places it matters most, because the food has already been cooked, cooled, and stored, which is more opportunity for problems than a fresh cook.
